In the 'old days' it would have been filmed somewhere like the Sierra Railroad with real trains on a real railroad.  Even building them from scratch none of the locos are authentic for the era of the movie and why do they always have to include things that would be downright impossible like riding a horse through the train.  Amazing to see what you can do if you have the money though, I bet most tourist railways would love the ability to build rolling stock like that.
