Tokyu Car Corporation is one of several car builders in Japan that produce Shinkansen trains.  Included on their English language web site are spec sheets for two different Shinkansen trains:

here's some background material on Shinkansen lines in a report called High Speed Rail in Japan:

A Review and Evaluation of the Shinkansen Train. The report was prepared in 1992 and focuses on the first 25 years of Shinkansen operation (1964-1989)

 

It includes construction standards for grade level track,  elevated sections, and tunnels along with track and switch diagrams.
