Can someone identify these trains?

They can be seen on google maps in the yard and station of aomori.

Are they available in N gauge?

You can use Hobby Search as a catalogue to find models of all these trains.

So these trains are mostly not related to Aomori? Except for the HB-E300, Hakucho and Kiha40.

I was a bit confused as I did not recognize these trains from my two days spend around Aomori and Higashi-Aomori station.

Nope. The 211 can't even run under 20 kV overhead and the 415 and 651 didn't run on services to Aomori either.

Are you planning on modelling a specific line or region maybe?

I plan to build a layout containing Higashi-Aomori and Goryokaku some time in the next years so Iam currently collecting trains related to these stations and the lines connected to them. Right now seems to be exactly the right time for that with the release of a lot of the trains from that area.

Unfortunately I got interested in this area only a short time before the change to shinkansen service so I missed the chance to ride the 485 series and to observe ED79-50 services.

The current release railway collect has the 701 series from Aoimori / Galaxy Railway.

Woah thanks for that tip! I was looking for the micro ace 701 for some time now, looks like I can stop doing this.

Do you know if any shop allows preorder of individual trains or do I have to preorder the whole set?

The same problem I got with my interest.

Good luck in finding important trains. I think you will have enough time to re-release :-)
